Turmeric Cauliflower Soup

This soup is a number of things:
1. This soup is a good way to get your health on.
2. It was a homework assignment for my Food for Thought cooking club.
3. It is just tasty and tastes good!

Cooking club wanted us to test/try a new spice and my was turmeric. I have always heard good things about it. This soup was my take of Moroccan lentil soup. I, of course, had to change it up a bit. Turmeric has a number of health benefits. Turmeric is a anti inflammatory, blood pressure aid, diabetes aid, cancer blocker, and more. I think I did great!

Tools: Cutting board, sharp knife, large soup pot
ingredients:
1 large cut onion
4 cups cauliflower cut in small pieces
1 tsp turmeric
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp ground pepper 🌶
6 cups chicken or vegetable broth
2 cups water
1 28oz can diced 🍅 tomato


combine all of these in the large pot and cook for 12- 15 minutes until the onions are soft.
1/2 cup quinoa
add the quinoa and cover for 20 minutes on low heat.
1 1/2 cups fresh spinach
2 TBSP cilantro
add these 10 minutes before serving. Now eat!

 

The Meat from Urban Farm

We have had this meat since January 9, 2016 and it does take getting used to. The chop meat is different but I am getting to like it. It is good in a sauce, tacos, meatballs, or chili. I have not had a burger with it yet because burgers are not my thing.The round steak was my favorite. It is tender and made awesome fajitas but i did not have tortillas I ate my over rice and beans with green salsa.  Oh man, it was good.  The beet stew meat is also good. I made it as beef stew. Good idea, right. It was. Beef stew over rice and served in a gravy, green peppers and onions. We are going to eat beef stew again tomorrow night and I will post how it is tomorrow. The short ribs we tough but it was our fault, we cooked it wrong. You read that correct, we did it wrong. Short ribs needs to cooked in a broth or gravy. We baked it in the over like ribs. Nope, can’t do that. Short ribs will be cooked differently next time.

The Meat

 Many people know I have many food allergies and that is why I started this blog.  I have started buying my meat and eggs at the Urban Farm in Crestview, Florida. The meat is different from what I am used to. The cows and chickens are grass feed.  I have made short ribs, beef stew and ground beef. I made the short ribs wrong. Yes, I made it wrong. They were tough. I baked them like baby back ribs. They are not baby back ribs. Shorts ribs need to be cooked in a gravy or broth. They should remind moist while cooking. The beef stew was good. I cooked it just like any other stew meat. The ground beef was cooked the same way as normal (fried in pan). The eggs have no taste difference. They do need to be washed before cracking. The chicken has very little fat.
i made this purchase because there is no soy in this meat.
Meat prices vary depending on time of year and quanity.  The price per pound was $5.50 when I purchased it. I purchased 1/4 of cow and we split it with a friend. If you pair up with a friend the cost is affordable.

Soybean is everywhere

Did you know there is soybean oil in some shampoos, body wash, and non-stick sprays like Pam? Please read your ingredients on any product you use.
My daily routine included a headache. No, not the husband but a real headache. Once I read the ingredients of products I used; I noticed soybean included on those lists. I stopped using my body wash and hair spray. I found ones that did not have soybean included on the lists and my headaches stopped. I also started to use local honey every morning. What a big difference it made.
