Strawberry Pecan Salad

You will need:

Romaine, Iceberg lettuce, spinach, any color peppers, tomatoes, strawberries, pecans, and any type of small tangerines.

Mix all together and add any salad dressing. Enjoy.

Sweet Beets

This dish a not a sour or bitter dish at all. It is a delightful sweet addition to any meal.

Tools:
1 frying pan and a spatula.
Ingredients:

  • 3 TBSP Brown Sugar
  • 1 TBSP Butter
  • 2 TBSP Juice from a can of mandarin oranges.
  • 1/4 tsp salt
  • I 16 oz jar of pickled beets

Cook the first 4 ingredients till it is a sauce.  Add beets with a slotted spoon. Simmer for 15 minutes on low heat. add to a serving dish and place a few oranges on top as a garnish.

Sausage with vegetables and pineapples

This dish was totally my own. I wanted to make something different using veggies I already had in the fridge. I had onion, broccoli, cauliflower, pineapple, and green onion from the garden. I just tried some chicken sausage with apples inside at Publix. The sausage was really good and I purchased it. Well, the final product was delightful.

tools needed:
cutting board, knife, bowl, frying pan, and deep frying pan
ingredients:
2 sausage links (I used chicken sausage with apples inside)
1/4 head chopped cauliflower
2 cups chopped broccoli
1/2 onion sliced
2 green onion straws (long)
can of pineapple (don’t drain) or fresh
butter
olive oil
salt n pepper
oregano
Basil
Fry the sausage by slicing the vertically in half. Fry them in butter and olive oil. Just enough so they don’t stick. You want to fry them until they have are nicely browned. Set aside. Cook some of the pineapple rings till slightly brown or to your liking but do t burn them. Set aside.
Place 2 TBSP butter with olive oil in deep fry pan over medium heat. Heat till butter is kind of cooking. Add all veggies. (If you want onions to be more cooked you can cook them first till slightly browned then add veggies) cook veggies for 12 minutes or so. Add salt and pepper and oregano. You can add 1TBSP pineapple juice to pan. I like mine aldente. You may want to cook your a little longer. Serve on plate with pineapple and sausage. I made bread with my meal and you may want to serve pasta.
This serves 2-3 but you can use as much veggies as you want. You will need to add more butter in frying pan for more veggies.
 
 

Chicken over asparagus pasta

This dish dish was supposed to be a Publix Aprons Recipe but I messed it up or made it better. I know it requires a lot of pots but it is so worth the mess. It was so good that my husband felt it necessary to clean it up with a piece of bread. 😂
tools:
large pot for cooking pasta and asparagus. Cutting board, large frying pan for chicken, sharp knife, large mixing spoons, gallon baggie, and large pot for final product.
Ingredients:
2 lbs chicken or 4-5 chicken breasts chopped into bite size pieces.
1/2 flour
1 TBSP season salt ( salt.pepper, garlic powder, and paprika)
In a gallon bag place flour and salt mixture then add chicken and coat well. Set aside.
1 to 1 1/2 lbs of cut asparagus
1 lb pasta
cook the pasta like normal. When the pasta is upmost done add asparagus to pasta and cook til pasta is done. Drain and place in large bowl with 1 TBSP garlic herb butter. Dine with the pasta, so cover with foil to keep hot.
1tsp lemon juice
2- 3.5oz Kerrygold Garlic Herb Butter
4 TBSP capers
1 cup chicken broth
1/2 cup heavy cream
cook chicken in 3.5 garlic butter ( just dump the chicken in the heated pan) for about 3-4 minutes or until chicken is no longer pink. Add heavy cream and mix until well mixed. Add chicken broth, lemon juice, and capers until blended. Heat for about 2-3 minutes.  Serve over pasta and asparagus. Enjoy. We also used the rest of the butter for bread. It was good.

Strawberries 🍓 Everywhere!

Today, Saturday, May 6, 2017, Emerald and I went picked 21lbs of strawberries on Akers of Strawberries in Milton. We have fun picking and chatting. We picked them so Emerald could teach me about (jarring) canning. I don’t think it should be called canning because we did not use a single can! (Just saying)  We made 15 jars of strawberry jam and over 2 dozen chocolate covered strawberry 🍓 cookies.
