This recipe was a last minute decision. I looked at a few recipes and came up with this. It is quick and should be good with chicken breast as well.
Items needed:
1 medium pot
1 smaller pot
1 baking pan
Ingredients
1 TBSP Olive oil
1/2 TBSP Butter
1 lb chicken tights
Heat oil and butter then add chicken on medium heat. Heat for 5 minutes then turn over and lower heat.
Oil for pan to cook onion
1 onion any size you want
1 large can diced tomatoes
3/4 cup Mascoto wine.
1 TBSP Salt
1 TBSP Pepper
1 TBSP Italian seasoning
2 tsp paprika
2 tsp Oregano
6-8 black olives
6-8 green olives
Almost one 6 oz can of paste
1/2 lb to 1 lb mozzarella cheese.
Heat oil and cook onion till slightly soft. Add the rest of the ingredients and stir. Cook for 5 minutes on low to medium heat. Cover.
After 5 minutes add to chicken pot and cover. Cook on low for 30 minutes.
After 30 minutes, pour mixture into a baking pan and add sliced mozzarella cheese. Bake at 350 for 15 minutes to melt cheese. Serve over pasta and enjoy.
Left over Corned Beef
Tools: You just need a deep fry pan
Ingredients:
2 tsp olive oil
2 TBSP butter
1 small onion sliced
Left over corned beef and cabbage
Heat oil, butter and onion till onion is soft. Add corn beef. Cook for 10 minutes stirring every 2 minutes. Heat cabbage separately in microwave for 4 minutes or until hot.
Service corned beef on top of cabbage with butter. Enjoy.

Fudge
I found this fudge recipe with some papers in a cookbook. I do not know where it came from but it is a good one.
Tools: one 2-3quart pot. one 8x8x2 baking square pan lined with foil or parchment paper.
Ingredients: 2 TBSP butter
1 1/2 cup sugar
2/3 cup evaporated milk
11.5 oz bag of chocolate chips
2 cups mini marshmallows
1 tsp vanilla
Cook butter, sugar and milk on medium heat for 4-5 minutes a a rolling boil and stir constantly. Remove from heat and add chips, marshmallows and vanilla mix all together till marshmallows are melted. Pour into lined baking pan and place in fridge for 2 hours.
Cake snickerdoodles
You will find these cooks so easy and tasty you will want to keep a white/vanilla cake mix on hand all the time. Cake mix cookies are easy to do. You just need an egg or 2 butter, nuts, or oil and vanilla. Try different combinations and you want a thicker dough then with the cake.
Tools: cookie sheets, one small and one large.
Ingredients:
1 box white/vanilla cake mix
1 stick of melted butter
1 egg (if egg is small use 2 eggs)
1 tsp vanilla
2 TBSP sugar or Splenda
1.5 tsp cinnamon
Bake at 350 for 10-12 minutes. Combine cake mix, butter egg and vanilla and mix well in larger bowl. Now in smaller bowl combine sugar and cinnamon.
Use a small greased cookie scoop to shape dough. Roll round dough in sugar mixture until coated. Continue until all the dough is gone and placed on cookie sheets. Do not flatten cookies on sheet. The dough should remain round, they will flatten as it bakes. Cookies will seem uncooked in middle but let them sit for 5 minutes after they are done baking.
