Sausage Chili
You will need one large stock pot for this chili recipe. I love the heartiness of this chili.
2 tsp olive oil
1/2 lg onion sliced small
1 lb smoked sausage
3/4 lb of cooked chop meat.
1 large can chili beans mild
1 can diced tomatoes.
2 envelopes beef bullion
1 cup water
1 TBSP cumin
2 tsp salt
2 TBSP chili powder
Heat oil and onion till onion is soft. Add sausage and cook for 5 minutes till sausage starts to brown. Add chop meat, beans, tomatoes, bullion, water, cumin, salt, and chili powder. Mix and then cook for at least 20 minutes. Taste, if necessary add salt or more chili powder. Garnish with shredded cheese.
Make mac n cheese or rice to serve with it or eat alone.
Poached Eggs
This method of poached eggs requires no fancy cookware just a small fry pan and a spoon. The video shows me cooking them on high heat but you can cook them on medium just be sure your whites are cooked. You may also want to trim you eggs once they are on the plate. The thin outer most edge of egg white can taste like vinegar. I trim them. The egg looks prettier and tastes better.

Chicken Chorizo with White Beans
This recipe takes 35-45 minutes beginning to end. You will need one deep pot. It should hold about 7 cups of food.
2 cups cooked rice
1 TBSP Olive oil
1 onion chopped
1 green pepper chopped
1 chorizo link with the skin removed. It kind of like a paste.
1 lb chicken breast small pieces
2 cups white beans
1 can tomatoes or 1 large tomatoe cut up.
2 tsp chicken bullion
2 cups of water
Cook onion and pepper in olive oil for about 3-4 minutes add chicken and chorizo until chicken is just about cooked. Add beans, tomatoes, bullion, and water. Cook for about 15 minutes on low to medium heat. Taste and add salt and pepper if needed. Serve over rice or eat plain.
Serves 4-6 people
