Brownie cookies

These cookies are very rich in chocolate flavor so have a cup of milk handy. They are from a cookbook called “Dessert for Two” by Christina Lane. I checked it out from the Fort Walton Beach Public Library.
Items needed:
Hand mixer
Medium and small bowl
Spoon
Measuring cups and spoons
Cookie sheet with parchment paper
Ingredients:
2 large egg whites
1/4 tsp vanilla
1 cup powdered sugar
1/3 cup unsweetened cocoa powder
1/2 tsp salt
3 TBSP chocolate chips or chopped chocolate
Heat oven to 350’F
In medium bowl mix together the egg whites and vanilla till soft peaks form.
In small bowl mix together all other ingredients except the chips. Whisk all together to get lumps out. Once lumps are out pour half the chocolate mixture into the peaked egg whites. Fold together till combined and add the rest of chocolate mixture and fold to combine then add chips. Place on cookie sheet to make ten equal sized cookies. Bake for 15 minutes and remove from oven to cool for a few minutes.
Eat with vanilla ice cream. Yum.

Easy Mayo

Easy mayo


Ingredients:
1 egg
1 tsp mustard
1 tsp vinegar
Pinch of salt n pepper
3/4 cup plus 1 TBSP oil
Items needed:
Medium bowl
Hand blender, like a Breville
Small jar or container for mayo
Directions:
Put egg, mustard, vinegar and salt and pepper in a medium bowl. Using the hand blender blend egg mixture and add oil at the same time. Mixture will continue to get thick as you add oil. Keep adding oil till the thickness you desire is achieved. We like it thick. This should take about 5 minutes including prep time. Mayo will be good in container in fridge for about 5 days. Please label and date this mayo. It makes about 1 cup of mayo.
You can also make it for any specific purpose. This mayo is made for a sandwich. You can make it different by adding different spices. For a dip just add you favorite soup mix.
